David has been here since the very beginning, a friend, a fan, a sometime-volunteer, a sometime-team member, a sometime-nude model. He and his partner Koala have carried the story of Yardley Brothers, as well as kegs, cans and bottles, far and wide, and shared across the world. They’re Good Eggs, the people who are always there for you, even when they’re traveling the world. This is a blend of a Bière Blanche, aged for three years in American Oak with wild American farmhouse yeast, and a younger mixed-fermentation beer with Omega Yeast’s Heliogazer and Lactobacillus. It pours a beautiful gold, with elegant notes of hay and light funk up front, followed by vinousness, with green grape, passionfruit, and nuanced minerality. Drink now or age gracefully and pair with great friends.
When we first tasted the fresher beer in the blend here, it raised lots of discussion of similarities across beer and some natural wines, so we present David, a tribute to friends and the connections between beer and natural wine.
AROMA: Pleasant tartness hints of oak and vinous wildness, bright notes of stone fruit, accompanied by complex layers of farmyard funk.
APPEARANCE: Gold and crystal clear with a soft off-white head that fades fairly quickly.
TASTE: Elegant tart farmyard notes, with layered minerality, guava, gooseberry and tropical fruits. Lasting pleasant funk. Dry finish with low carbonation
PAIRING RECOMMENDATIONS: Washed-Rind Cheeses, Ricotta Salata, Grilled Green Peppers and Halloumi, Scallion Pancakes
